Radiation, Chemo and Beyond
I created this recipe by combining elements from other granola recipes early in my radiation treatments. I wanted something gentle to eat that also left me feeling full, that satisfied the desire for something crunchy, sweet, and salty, and was without additives and lots of sugar. This is still a staple in my house; I make a fresh batch every two weeks.

Preheat oven to 350 degrees Fahrenheit

In a small pot over medium heat, bring 1/3 cup extra virgin olive oil and 1 tsp ground cinnamon to a simmer, then remove from heat and set aside.

In a large bowl, combine oats, buckwheat, seeds, cranberries, maple syrup, salt, olive oil with cinnamon, and egg whites. Combine until everything is well mixed and moist.

Spread in a thin layer on parchment-lined baking sheet and bake in oven, Rotate at 15 minutes and bake for a total of 20-25 minutes.

Let cool for 15 minutes.

1/4 cup Pumpkin Seeds
1/4 Sunflower Seeds
1/2 cup Dried Cranberries
2 Egg Whites
1/2 cup Maple Syrup
2 tsp Kosher Salt

Homemade granola to snack on alone or use as a topper to a fresh bowl of yogurt. Pumpkin seeds and sunflower seeds provide healthy fats for heart health, fiber for digestion, protein for muscle repair, antioxidants to reduce inflammation and minerals like magnesium, selenium and iron. Look for unsweetened dried cranberries to keep sugar content low or swap them for unsweetened dried blueberries.
